My Mom’s ‘Sunday Night’ Lasagne Recipe

When my brothers and I were little one of our favourite meals was lasagne. My Mom did not make it very often so I think that made it all the more special :) Nowadays it is pretty easy to just buy a pan of frozen lasagne from the grocery store. It is convenient, usually cheaper than buying all the ingredients but there is NO way it is tastier!! Recently I took the time to make lasagne on a cold Sunday and boy did it taste good. It reminded me of why its a good idea to make homemade lasagne every now and then!

Ingredients

  • 1 –1/2 lbs. of ground beef
  • 1 chopped onion
  • 1 tsp. of garlic powder
  • 1/2 tsp. of oregano
  • 1/2 tsp. of tarragon
  • 1/2 tsp. of basil
  • cayenne pepper
  • salt and pepper
  • 1 can of tomato paste
  • 1 can (7-1/2 oz.) of tomato sauce
  • 1/2 cup of water
  • 1 package of lasagne noodles
  • mozzarella cheese slices (12 oz.)
  • 2 cups of cottage cheese
  • 2 cups of parmesan cheese

Directions

  • Brown and ground beef and the onion
  • Stir in the spices, tomato paste and sauce and simmer
  • Cook the lasagne noodles using the directions on the package
  • Using a 9 x 13 pan layer the ingredients (see the list below)
  • Bake for 30 minutes at 350′ F

LAYERS

  1. noodles to cover bottom on baking dish
  2. 1/2 of the meat sauce
  3. mozzarella slices to cover the meat (approx. 6 slices)
  4. noodles
  5. 2 cups of cottage cheese
  6. noodles
  7. 1 cup of parmesan cheese
  8. the rest of the meat sauce
  9. mozzarella slices
  10. sprinkle with the rest of the parmesan on top

**I had some extra shredded mozzarella in my fridge so I added it onto the top of the lasagne, making it nice and cheesy!

A pan of lasagne sure is a great dinner and the leftovers taste good too. You certainly could spice this up a bit with your favourite things! This recipe is a family friendly mild version. Just the way Mom made it. ♥
