My Light Fettuccine Alfredo Recipe

In my quest to make a bigger variety of healthier meals for my dinner, I made this lighter version of Fettuccine Alfredo for dinner.( I know, i know, there is butter but I cut it back) I liked it a lot and my children enjoyed it too. It is a dish that you could add in some extras. Chicken would be awesome (but we eat a lot of meat so I was wanting to try a dish without meat) and some vegetables would be great too.

Ingredients

  • 1 lb. of fettuccine
  • 1/2 cup of butter
  • 1/4 cup of water (reserved from the pasta)
  • 1 cup of fresh parmesan
  • pepper to taste

Directions

  • Cook the pasta as directed
  • In a large pan melt the butter.
  • Toss in the pasta, 1/4 cup of water and parmesan and pepper.

You can serve it with a little extra parmesan on top if you like.

This recipe is not fancy and not really rich and creamy since it is not made with real cream. However, it was tasty and I think it is a great quick meal especially for kids! Since making this recipe, I have made another pasta dish called ‘Skillet Penne with Chicken and Broccoli’. It was really good and I will share that with you soon too.

Today Kansas is awaiting a winter storm which will pass through today and tomorrow. The build up from the media has been great! I typically find an approaching storm a little bit exciting… the hype, the drama and the excitement! It can be fun to be buried into my home, safe and sound with my family! There could be a little baking and crafts and even a board game! Doesn’t that sound great? hee hee. (O.K. I do agree, there can certainly be TOO many snowstorms) However, I am wondering if Kansas is capable of supplying such a storm. I am curious to see what a “big snow storm” in south east Kansas will be like.

Time will tell, gentle snow flurries are just starting to fall. I will let you know Smile

  1. Hope it is just the perfect amount of snow. Just enough that you can watch pretty snowflakes falling while you are curled up in front of a cozy fire, yet when you wake up the next day, it has all melted!

    • I did enjoy watching the snowflakes fall yesterday but this morning this storm is looking pretty huge! News people say its the worst storm since 1968! School has been cancelled and our road has not been plowed…so looks like a snow day for sure!!! ( we may even need to unpack our winter boots!!)
